Pengaruh Jenis dan Proporsi Pati Ubi Jalar (Ipomoea batatas) Terhadap Mutu dan Daya Terima Roti Manis

Demand for sweet bakery products increased significantly in line with rising incomes due to the growing image and social status.A study on using sweetpotato starch as apartial wheat flour proportion in sweet bread making was performed in terms of extending the utilization of sweetpotato and improving the image as well as added value of the products. This study aimed to investigate the effect of type and proportions of starch sweet potato (Ipomoea batatas) on the quality and acceptance of sweet bread. This research is an experiment with the entire population of the sweet potato is available in the market Craving Banjarbaru area, with a number of samples are 2 types of white and purple sweet potatoes. The results showed the influence of the type and proportion of sweet potato on the quality (carbohydrates, protein, fat and sugar) sweet bread with Some influences the types and proportions of sweet potato to the power received (color, aroma, texture and flavor) sweetbread.

Pengaruh Pemberian Suplemen Vitamin Terhadap Perubahan Status Gizi (BB/U) Balita Bawah Garis Merah (BGM) di Wilayah Kerja Puskesmas Kambat Utara Kabupaten Hulu Sungai Tengah (HST) Tahun 2010

Total of BGM toddlers in Kambat Utara Public Health Centre in 2009 are 79 toddlers, still high above the target (5%), that is (6%). According to Bhutta et al (2008) reducing malnutrition of infants and toddlers can be done by a fortification/supplementation of vitamin. This study aims to determine the effect of vitamin supplementation on changes in nutritional status (weight/age) of BGM toddlers. This research used an experimental research design with pre-experiment and form design “One group pretest-postest”. Research conducted in
September to November 2010, with sample 24 BGM toddlers, and the age is 12 to 48 months. Before doing the study, infants or toddlers were weighed to determine the nutritional status based on weight and age (BB/U). Vitamin supplements given every month (60 ml bottle) with dosage drink 1 tsp/day or 5 ml/day. During research every toddler get 3 bottles syrup of vitamin supplements for 3 months. After that, toddler were weighed again to determine the end of nutritional status. The effect on giving vitamin supplement to nutricient status changing on weight and age (BB/U) of BGM toddlers were analyzed by using computer program SPSS 13 for windows. The statistical test used is dependent mean difference test (Paired Sample T-test). The result of p value = 0.0000 which is smaller than the value of alpha (0.05). So, there is the effect on giving vitamin supplement to nutricient status changing on weight and age (BB/U) of BGM toddlers.

Faktor-faktor yang Berhubungan dengan Sisa Makanan Pasien Rawat Inap di Rumah Sakit Jiwa Sambang Lihum

The service of patient’s meal in hospital purposed to complete the necessity of substances patient’s nutrient in order to support the healing process and reach optimum nutrient status. How ever until now, the quality of meal service in the hospital does not said complete yet. The problema that faced is the consumption level which is less, so that it causes remnant at served meal. The purpose or this research is to know the factors that related to meal remnant of stay overnight treatment patient in Sambang Lihum Mental Hospital. The design of the research is cross sectional with survey approach. The subject of the research number in 59 people, they are patient of class III in Pinus Room and Nusa Indah Room which are already calm, can be invited to communicate and can eat by them selves. Patient’s who are more than equal 35 years old, the most of meal remnant is vegetable 93,1 %, patient are less than 35 years old, the most of meal remnant is vegetable too, 43,3%, patient who are educated more than equal from high school, the most is vegetable too 80%, while patients less than from high shcool, the most is also vegetable 63,6%. The taste of the meal is satisfying in the amount of 54,2% and not satisfying in the amount of 45,8 %. The average of the patient’s meal remnant is so much (more than 25%) to the kind of vegetable meal is in the amount of 67,8%, animal dish is left over 52,2%, and vegetable dish is left over 50,8%. There is a relation between the meal remnant with age and the meal remnant with the taste. There is no relation between the meal remnant with education degree.

Law No. 25 of 2000 on the National Development and Vision Program Healthy Indonesia 2010 set 80% of the family became aware of the family nutrition (Kadarzi). Results Kadarzi survey data in 2006 and 2007 found a family that has not Kadarzi 52.7% and 27.2%. Toddler Nutritional Status Monitoring (z-Score W/A) obtained malnutrition status showed an increase, which in 2004 was (5.1%), 2005 (9.8%) and 2006 (10.1%) Interest study was to determine the relationship of knowledge and attitudes of mothers about nutrition-conscious families with family status Kadarzi at children aged 6-36 months in the Tajau Pecah public health center Sub-district of Batu Ampar District of Tanah Laut Province of South Kalimantan. Observational research with cross sectional design. The analysis used is the Chi-Square Test and Multiple Logistic Regression (Multiple Logistic Regression) and supported analysis qualitative depth interview with the family has not Kadarzi. Family Research’ve Kadarzi 56 (64.4%) and not Kadarzi 32 (36.4%). There was a significant association between mother’s knowledge and attitudes about self-conscious behavior Kadarzi nutritional status. The higher the mother’s knowledge about Kadarzi the greater the likelihood of families to apply Kadarzi.

Pengaruh Penggunaan Garam Beryodium Terhadap Status Gizi Balita Pendek Di Kecamatan Amuntai Tengah Kabupaten Hulu Sungai Utara Tahun 2010

The state of nutrition is the major prerequisite in achieving a healthy Human Resources and qualified. Iodine is a micronutrient required for the growth and development. In the human body, iodine is needed to form thyroxine hormone that functions to regulate growth and development, including intelligence. Iodine deficiency especially in childhood will have serious implications on the physical and mental development. Based on the results of the monitoring of iodized salt in 2009, the District Hulu Sungai Utara, especially for the District Central Amuntai known that the villages with poor category by 50%. Therefore, this research want to know the effect of usage iodized salt to the nutritional status of children in District Central Amuntai Sub Province Tanah Laut in 2010. Type of research is observational case control study design, population in this study were all under five in District Amuntai Central 4800 which amounted to a toddler, the sample in this study were all families who have children with low nutrition status of as many as 49 people and 49 people as a control. The results showed the use of iodized salt had effect on toddlers that have short nutritional status based on height according to age, as shown by the chi-square test results show that the value of p = 0,024 <0.05, as well as the use of iodized salt had effect on normal nutrition status in children based on body weight according to age, as shown by the chi-square test results show that the value of p = 0,024 < 0,05.

Nutrition Implementation Staff (TPG) in public health center of vital importance its role to execute effort repair of efficacy and nutrition in executing the the duty depended each performance of nutrition implementation staff in public health center. Performance influenced by two factor that are work load of nutrition implementation staff and supervision of public health center. Analysing work load relation of nutrition implementation staff and supervision of public health center to performance of nutrition implementation staff in executing program duty of nutrition in public health center is very important to study.This research is analytic descriptive with cross sectional study. This study was conducted at 21 nutrition implementation staff in public health health center Sub-province Tanah Laut. Execution of research done in August to November 2010. We analyzed performance of nutrition implementation staff in executing program duty of nutrition in public health center, work load of nutrition implementation staff and supervision of public health center to see variety of each variable, we used descriptive analysis, while to see correlation between variable we used coefisien correlation pearson test. The result showed work load have value of p = 0,863 (p >0,05), its mean there’s no correlation between work load and TPG to Performance, while supervision of public health center Sub-Province Tanah Laut have value of p = 0,006 (p <0,05), its mean supervision have correlation to performance of nutrition implementation staff. Work load of nutrition implementation staff not correlated to performance of nutrition implementation staff public health center, while supervision of public health center Sub-Province Tanah Laut correlated to performance of nutrition implementation staff.

Husband Knowledge and Husband Attitude about self-supporting family conciousness ofnutrition in general relate to executing indicator of KADARZI in life everyday. Puskesmas Batakan there are 28,9% family with status of Kadarzi and 71,1% family with status do not Kadarzi. This research to know correlation of knowledge and husband attitude with status of Kadarzi region of Puskesmas Batakan District Of Panyipatan Sub-Province Tanah Laut 2010. This was an observational research with cross sectional analytic population is families or households who have children 6-24 months, the sample in this study as much as 83 respondents. The analysis was performed descriptive method and statistically using Chi-Square. The result obtained there is correlation between husband knowledge of the status Kadarzi, there is correlation between husband attitude of the status Kadarzi regional of Puskesmas Batakan. Need to increase knowledge of the husband and change attitudes towards a good husband so as to reach families who Kadarzi. By way of increasing the active role of the community to come to health facilities, carry out extension and more intensive education to the community and the support and participation across sectors, community leaders and religious figures.
